I managed to book a room at the The Chateau, for Bees birthday that was on Monday. So we drove down and headed straight up to happy valley.
1st trip down the ice on a sled with Ivy – we got so much speed up , we hit a bump, and legs and arms in the air!
Tomorrow we are back up for Hazel’s 1st ski lesson.
I don’t ski! I had a big fall when I was in Europe the first time I tried it and figured I better stop while I was still alive!
So it’s bloody cold here! -6 and this week at Boy and Bird I put on a special soup with duck.
It’s a soup that has a very special place in my heart.
Spiced coconut soup
- 1 head broccoli, chopped whole
- 2 carrots, peeled and chopped
- 1 onion, peeled and chopped
- 4 cloves garlic, crushed
- 1 small knob ginger, grated
- 2 Tb oil
- 2 Tb curry powder
- 2 litre vegetable stock
- 1/2 litre coconut milk
- Salt and pepper
Throw all the ingredients into a pot and bring to the boil, simmer until tender.
Blitz and add
- 50 gm butter
- 1/2 cup cream
Serve with roasted duck that’s been shredded or add in some canned chopped lychee .
