Mike and Bee have created a brand new class at the cookery school, made especially for those with an interest in using the Engel Fire and wanting to learn more about smoking, grilling and cooking over flames.
Picture yourself amongst the lush outlook of the Muriwai hills: grilling, smoking, learning and indulging in a half day experience that teaches you a range of tips and tricks to make the most of your Engel Fire.
Upon arrival, you will start the day with coffee or tea, before gathering around the large macrocarpa farm table with Mike who will walk you through the day. The main aim of the class is to produce a meal that has been constructed around cooking on an Engel fire.
Food prep starts with the deboning of a lamb shoulder, running through stuffings, cold smoking, rolling and methods of tying before cooking on the rotisserie. You’ll also together make wood-fired flatbreads, charred sauces and flavour rubs using different elements of the fire. Throughout the day Mike will run you through tips and advice about cooking with wood and hot smoking.
This is a hands-on class that finishes with a delicious sit down meal of rolled lamb shoulder, salads, wood-fired bread and pickles. There is an opportunity to purchase and enjoy some local craft beers, wines and homemade sodas during lunch.
Throughout the day you are encouraged to ask lots of questions so that you leave confident, knowing how to cook with your Engel Fire.
