World Cup football is on and I am doing a dish this week that I’m sure a lot of the Dutch followers will be eating while watching the games!
There will be plenty of food flowing whilst their team is not playing this delicious snack is perfect for such events.
Beef Krokets
You will need :
- 1 kg of beef blade steak
- tbsp of chicken stock powder
- 1 tbsp salt
- 100 gm butter
- 100 gm flour
- 1 litre of stock (reserved from cooking the beef )
- 3 tsp gelatine
- 1 tbsp water
- flaky salt
Place the beef in a deep saucepan and cover with water
Add the chicken stock and salt
Braise for 3 hours
Remove the beef from the stock, shred and set aside
Melt butter in a saucepan and flour and cook stirring until the flour turns golden
Add the reserved cooking stock gradually and continue stirring until thick
Add the beef
Sprinkle the gelatine over a little water and leave to swell then heat to dissolve
Add to the sauce and mix
pour into trays and cool
then shape into 40 gm portions into a cylinder shape
Crumbing
You will need:
- 1 cup of flour
- 1 egg
- 1 cup milk
- 1 cup of breadcrumbs
- white pepper
Mix flour and pepper into a large dish
Beat egg and milk together to make a wash
Place breadcrumbs into a bowl
place the cylinders into the flour then the egg wash, and finally the breadcrumbs to cover completely
Set into the fridge for 2 hours
Heat a little oil in a heavy-based saucepan and pan fry until golden on all sides
Serve with a mustard mayonnaise if you wish
