It’s hard to believe the holidays are now over and the kids are back to school, yeah! These holidays we didn’t have a huge amount of time with the kids as we were working but I’m hoping this recipe will bring everyone together when time is precious.
So this week I want to bring you a fast and delicious family dish that the whole family can enjoy.
- 1 Egg
- 1 onion, diced
- 150 gm Tofu, large diced
- 2 Tbsp brown sugar
- 2 Tbsp Sweet chilli sauce
- 2 Tbsp Soya sauce
- 12 prawns, peeled
- 1/2 pack Flat noodles, soaked for 10 minutes
- 1/2 pack bean sprouts
- 1 Spring onion, diced
- Roasted peanuts for garnish
- 1 lemon
Heat a large pan or wok, over medium heat. Add in a touch of oil followed by the egg, using a fork scramble.
Take the rice noodles and place them into a bowl, pour over boiling water and allow to soak for a couple of minutes, then drain. Back to your pan add the diced onion and diced tofu. Then add the brown sugar, sweet chilli and soy. Followed by the prawns. Then add in the drained rice noodles, and finally the spring onions. Serve on a plate with some sprinkled peanut and a slice of lemon.
