Delicious and perfect for a winter dinner for the whole family.
The cooking time is short so use a tender cut of lamb as suggested below.
Lamb has come down a lot in price over the years so its an affordable dish full of flavour!
You can finish the dish by adding some blanched green beans for some added flavour!
Serves 2 to 3
Ingredients
- 300gm of cubed lamb shoulder or leg
- 2 Tbsn of olive oil
- Large onion
- 6 rashers of bacon
- 250gm new potatoes halved
- 3 sprigs rosemary
- Sml bunch of thyme
- 2 cloves of garlic
- 500ml of chicken stock
- 150ml of sour cream
Season the lamb with a little salt and black pepper
Add the 2 tablespoons of olive oil to a pan and lightly brown all over
While the meat is browning peel and chop the onion and finely chop the bacon.
Remove the lamb and transfer to a small bowl
Add the onion and bacon to the pan and cook for 10 mins until golden
Add the halved new potatoes and add to the bacon and onion along with the herbs
Add the stock and return the lamb to the pan
Let everything simmer on a low heat for 30 mins or until the potatoes and lamb are tender
Check the seasoning and spoon in the sour cream stir and leave to warm through
