So this week marked the beginning of school for our two kids. Finally! Pretty sure they were happy to go back but not as much as mum and dad.
Don’t get me wrong I enjoyed the holidays and spending every moment with them, but sometimes we just need a wee break from the sausages!

So with them going back to school also brings the weekly chore of school lunchboxes. So this week I thought I might offer some advice or helpful tips to make that job a wee bit easier.

This is what we do in the Van de Elzen house:

  • Always prepare more for dinner and then you have leftover for the lunchboxes in the morning. This could include, crumbed fish, couscous salad, lasagne or creamy pasta
  • Pop the leftovers into a separate snap lock container and heat them in the morning before popping them in their bag with a wooden fork
  • Buy a new lunchbox with separate compartments, like a japanese bento box. makes it so much easier to package the different items and cuts out the requirement for plastic wrap
  • If you have a moment cut up heaps of fruit at the beginning of the week and store them in a snapback container in the fridge for the rest of the week
  • Wraps ! Kids love them and you can pretty much put anything into them. ( in saying that my kids are not fans!)
  • Try and get the kids to start partially making their own lunchboxes the night before, even if it’s just putting a couple of crackers into it. Its a start and they can build from there

Makes 3 long rolls, cooking time 30 minutes


  • 500 gm chicken mince
  • 1 large courgette, grated and squeezed
  • 1 small onion, peeled and finely sliced
  • 1 tsp crushed garlic crushed
  • 1 tsp salt
  • ½ cup fresh wholemeal breadcrumbs

1 pkt store brought puff pastry

In a large bowl, combine all the filling ingredients.
Cut puff pastry into long strips approx. 15cm wide, lay-portioned chicken onto the pastry and roll pastry over to form a round. Sealing with egg wash


  • 1 tsp poppy seeds
  • 1 egg lightly beaten

Paint egg over the top of the roll, sprinkle with poppy seeds.

Place in oven on 170 for 30 minutes.
