One of my favourite desserts!

This is what you need :

  • 2 cups of strawberries hulled and halved
  • 2 tablespoons balsamic vinegar
  • 2 tbsp of coconut sugar or honey
  • Pinch of cracked black pepper

Place strawberries in a bowl drizzle over vinegar and sprinkle over the sugar
Stir gently and leave at room temperature for at least an hour (please note this should be made just before serving)

Now for the panna cotta.

This is what you will need:

  • 1 and a half teaspoons of powdered gelatine
  • 1 tbsp water
  • 150ml of milk
  • 300 ml cream
  • 20 gm sugar
  • 200 gm white chocolate

Sprinkle gelatine over water and leave to swell
Place milk , cream, and sugar in a saucepan and simmer
Mix to dissolve sugar
Let stand for 2 minutes and then add chocolate and gelatine
Mix until dissolved
Pour into glasses and set in the fridge overnight

To serve remove from fridge and spoon over a generous amount of balsamic strawberries
You could garnish with some roasted coconut shavings and shredded mint
